I’m a producer of the authentic DOP Traditional Balsamic Vinegar - not the easily one that you find at the supermarket - and I’ll tell you its history and why locals love it so much! It’s not born to be a business like many of the others, it represents a great part of our local culture. We will also visit the production of the Parmigiano Reggiano Cheese, that’s a local family business where no one speaks English and last but not least, the Winery that wonderfully represents the essence of the Made in Modena. In 1995, Fausto decided to convert the cultivation of the vineyard to an “integrated pest management approach”. This represented the first step towards an organic agriculture. At the end of 90s, the production was changed towards the “Martinotti” or “Charmat” method, always searching for a clean and continuous product. Nowadays, with all of the wines in purity, the production of the “Fattoria Moretto” aims at expressing with personality the Lambrusco Grasparossa territory, showing a clear decision of Fausto and Fabio: they don’t focus on company policy based on quantity, but they prefer to have a management which leads to improve the quality of the product and service offered, with special attention to the peculiarity of the territory.

The winery is located within an estate of 130 hectares and is almost 40% cultivated with organic techniques, very important here is the concept of Biodiversity which finds its maximum expression throughout the country Italy. Organic means high quality and what we want to express in all our bottles is the sense of care and cleanliness on the palate. The team is made up of healthy carriers of passion for their work who with empathy and professionalism transmit as much information as possible to make a romantic experience live, but also technical if necessary.
